Blood Orange & Jalapeno Mahi Mahi – This light and flavorful dish features our Fresh Blood Orange Olive Oil and our Fresh Jalapeno Olive Oil for a beautifully layered dish you’ll make again and again.
Ingredients
1/2 cup 1/3-inch cubes avocado
1/3 cup chopped red onion
2 teaspoons minced red jalapeño
2 teaspoons fresh lime juice
2 teaspoons Fresh Blood Orange olive oil
2 teaspoons Fresh Jalapeno olive oil
2 6-ounce mahi-mahi fillets
Preparation
Step 1
Add avocado, onion, jalapeño, and lime juice to bowl; stir gently with 1teaspoon each of Blood Orange and Jalapeno olive oils to blend. Season salsa to taste with salt.
Step 2
Heat remaining (1 teaspoon each Blood Orange and Jalapeno) oil in heavy medium skillet over medium-high heat. Sprinkle fish with salt and pepper. Add fish to skillet and sauté until brown and cooked through, about 5 minutes per side.
Step 3
Place 1 fillet on each of 2 plates. Spoon salsa atop fish and serve.
