You can get the perfect chocolate chip cookie by using oil from @temeculaoliveoilcompany 🎄here’s how!
Recipe:
- 1/4 cup granulated sugar
- 3/4 cup packed dark-brown sugar
- 1/2 teaspoon kosher salt
- 1/2 cup extra-virgin olive oil, plus more for brushing
- 1 large egg plus 1 yolk
- 1.5 teaspoons vanilla extract
- 1 3/4 cups all purpose flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/3 to 1/2 cup chocolate chips/chunks
- Flaky salt (optional)
- In a large bowl, whisk together brown sugar, white sugar, olive oil, eggs, vanilla extract, and salt until fully combined
- In a medium bowl, mix together flour, baking soda, and baking powder
- Pour dry ingredients into wet mixture and combine with a spoon just until fully incorporated.
Mix in chocolate chips
- Chill dough in the freezer for 10-15 minutes until it firms up a bit
- Scoop out two-tablespoon portions of the dough and roll into balls. Place cookies an inch apart on a parchment lined sheet (they spread a little more than butter cookies, so leave room)
- Lightly brush cookies with a very thin layer of olive oil and bake at 375ºF for 9-12 minutes. Cool on a baking rack for five minutes
- Sprinkle with flaky salt and enjoy
