Mediterranean Grilled Chicken Skewers made with our Roasted Garlic Olive Oil and our Fresh Oregano Olive Oil
Ingredients:
- 1 lb chicken breast, cut into cubes
- 2 tablespoons Temecula Olive Oil Roasted Garlic Olive Oil
- 1 tablespoon Temecula Olive Oil Fresh Oregano Olive Oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Juice of 1 lemon
- Salt and pepper to taste
- Cherry tomatoes
- Red onion, cut into chunks
- Bell peppers, cut into chunks
- Wooden skewers, soaked in water for 30 minutes
Mediterranean Grilled Chicken Skewers
Instructions:
- In a bowl, whisk together the Roasted Garlic Olive Oil, Fresh Oregano Olive Oil, minced garlic, dried oregano, lemon juice, salt, and pepper.
- Add the chicken cubes to the marinade, ensuring they are evenly coated. Cover and refrigerate for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken cubes onto the soaked wooden skewers, alternating with cherry tomatoes, red onion chunks, and bell pepper chunks.
- Brush the skewers with a bit of extra Roasted Garlic Olive Oil.
- Grill the skewers for 8-10 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender.
- Serve hot, garnished with fresh oregano leaves if desired.
