Honey-Garlic Chopped Chickpea Salad made with our Roasted Garlic Olive Oil and our Balsamico Bianco with Honey.
Ingredients
FOR THE DRESSING:
- 1/3Â cup Balsamico Bianco with Honey
- 1/2Â teaspoon kosher salt
- 1/4Â teaspoon freshly ground black pepper
- 1/4Â teaspoon cayenne pepper
- 3/4Â cup Roasted Garlic Olive Oil
FOR THE SALAD:
- 2 (15-ounce) cans chickpeas, drained and rinsed
- 1 medium cucumber, quartered lengthwise and cut into 1/2-inch slices
- 1Â cup shredded red cabbage
- 2 medium carrots, peeled and diced
- 1/2Â cup small-dice red onion
- 1/2Â cup coarsely chopped fresh cilantro
- 1/2Â cup unsalted roasted peanuts, coarsely chopped
INSTRUCTIONS

Make the dressing: Whisk the oil, vinegar, salt, and pepper together in a small bowl.

Make the salad:Â Place all the ingredients in a large bowl. Drizzle with dressing and toss to combine.
